Sartori Cheese Makers hope to go for the gold again

Last year Mike Matucheski won Sartori Cheese first place at the National Championship Cheese Contest with his Black Pepper BellaVitano. With more at stake in this year's global competition, Mike says doesn't let the pressure get to him. In fact, he didn't even go to the competition. News Channel 7 caught up with Mike at the Sartori Office in Antigo where he shared with us the secret to making championship cheese.
"It's a very personal thing. You understand day after day what it takes to produce something that can be so wonderful and because in a competition you never know who you are up against. You never have a clue.. a real clue.. where the judges are that particular day and there's this element of chance in it."
By tomorrow the World Championship Cheese Contest Judges will have evaluated a record breaking 3,402 entries. Mike says-- for him-- every day is a chance to make an award winning cheese.
