On Thursday, May 31 $4,781worth of food will be delivered to the Neighbor’s Place in Wausau following a cooking contest asking people to create a recipe using five items commonly found in food pantry.
Kam Aures, of Kronenwetter, won the most votes with her peanut soup recipe. Aures selected to Neighbor's Place to be the recipient of the food donation.
Here's the recipe:
Peanut Soup
From Kam Aures of Kronenwetter, WI
3 T canola oil
1 clove garlic minced
2 celery ribs, diced
½ small onion, diced
1 green bell pepper, diced
28 oz can diced tomatoes
8 C chicken broth
1 C peanut butter
½ C rice
Dash of chili powder
Salt and pepper, to taste
Sauté garlic, celery, onion, and bell pepper in oil for 3 minutes. Add tomatoes, broth, chili powder, salt, and pepper and simmer for 35 minutes uncovered. Add rice. Cover and simmer for 15 more minutes. Stir in peanut butter and serve.
