How to Make Early Spring Tarts


Friday morning on Sunrise 7, Chef Dave Alter with Sweet & Savoury in Wausau showed us how to make spring-time tarts.

Recipe for the tart filings

1 sheet of puff pastry
2 cups of your favorite fruit strawberry/apple/blue berry/pineapple etc finely diced (not the blueberries)
1 TBL lemon juice
2 TBL brown sugar
2 TBL white sugar
1 pinch of salt
2 TBL butter

Preheat oven to 400 degrees

Sautee the fruit with the butter, white sugar, brown sugar, lemon juice and salt until a syrup develops in the pan. Remove from heat.

Roll out puff pastry with a rolling pin until it about half of the purchased thickness. Cut out circles to fit a muffin tin and place pastry circles in tin using cup cake papers. Fill pastry rounds with filling and place in oven. Bake until pastry starts to brown and filling is bubbly, about 15-20 minutes.

Remove from oven and remove pastries from tin while still warm. Serve immediately with a scoop of your favorite ice-cream.
