We’re nearing the end of June and probably thinking forward to Fourth of July festivities and get together. Beth Schaeffer from the Wisconsin Milk Marketing Board stopped by Sunrise 7 Tuesday morning to share some quick and easy recipes to share with your friends this summer.
Sweet and Crunch Dip
Ingredients:
1 cup (8 ounces) Cottage Cheese
1 package soften cream
1 tablespoon honey
½ cup walnuts
½ cup raisins
Mix together with hand mixer
Cottage Avocado Dip
Servings: Makes about 2 1/2 cups
Ingredients:2 Roma tomatoes, chopped
1 cup (about 1/2) yellow pepper, diced
1 clove garlic, peeled
1 cup (8 ounces) Cottage Cheese
2 ripe avocados, halved, pitted
1 tablespoon fresh lime juice
4-5 dashes hot sauce, or to taste
Salt and pepper, to taste
Cooking Directions: Grill or roast tomatoes and pepper on foil-lined pan (grill 10-15 minutes or roast 20 minutes at 425°F); set aside to cool.
Meanwhile, with blender or food processor running, drop in garlic clove and mince; turn off. Add Cottage Cheese and one avocado; purée until smooth. Mash remaining avocado in medium bowl. Stir puréed avocado mixture, cooled roasted vegetables, lime juice, hot sauce and salt and pepper into the mashed avocado. Serve with corn tortilla chips or jicama sticks.
