Chocolate Chip Banana Cookies. Recipe from: Joan Seubert November 29, 2012)
2 1/2 cups all purpose flour
1/2 teasp. salt
1/2 teasp. nutmeg
1/2 teasp. cinnamon
1/4 teasp. cloves
1/2 cup real butter - room temp
1 cup white sugar
1 egg - room temp
1 cup mashed bananas (ripe - I usually use my blender to mash them up)
1 teasp white vinegar
2 1/2 teasp baking soda
1 pkg (6 oz) semi-sweet chocolate chips
Chopped walnuts (I don't measure, use about 1/4 cup)
Preheat oven to 350 degrees
Sift together flour, salt, nutmeg, cinnamon and cloves into a bowl. Set aside.
Cream butter, gradually add sugar. Beat until light (1 - 2 minutes scrapping sides)
Add egg, banana, baking soda and vinegar to butter mixture. Beat until light and fluffy (1 - 2 min scrapping sides).
Add flour mixture gradually, mix well.
Stir in chocolate chips and nuts, mix well.
(I line my light colored baking pan with parchment paper-no greasing needed). Place dough by teaspoonfuls onto prepared baking pan and bake approx. 8 - 10 or 11 min. Just until lightly browned, cookies will be soft and cake like.
