SHEBOYGAN, Wis. (AP) -- Thanksgiving can be one of the toughest holidays for people with celiac disease, an autoimmune disease marked by sensitivity to gluten, a protein in wheat, barley and rye.
The stuffing is off-limits. So are the rolls and pies.
And, Sheboygan Press Media warns that even turkey may not be safe because some meat companies use gluten when processing the birds.
LaVonne Young was diagnosed with celiac disease about six years ago. She now substitutes gluten-free foods on her Thanksgiving menu, including a sweet potato dish for the green bean casserole she used to make.
But Young says she also keeps in mind that eating isn't the point of the holiday. She looks forward to being with family and giving thanks for what they have.
