Michele's Restaurant is a pretty big part of John Todd and Terri Konkol's lives.
It's easy to understand why they are among the restaurant's most loyal customers.
"We met here on a blind date, we got married and had our wedding reception here. We pretty much, unless we are out of town for some reason, we will be here every Wednesday night." the couple says.
While nostalgia is one reason John and Terri keep up the weekly tradition, the food is another.
Something Chef and Owner Thad Klasinski is pretty proud of .
"I have tended bar in the past. I have done dishes in the past. I have created menus. While I have done a little bit of everything, my heart is about the food." Klasinski says.
Having the unique combination of being both a chef and business owner, not a single parmasan filet, ahi tuna salad, nor trimisu comes out of the kitchen without Thad's influence.
"I would say that it is an integral part that you know everything that happens in the back of the house, as well as in the front of the house." Klasinski says.
Just like any good actor or writer, chefs also need their critics.
Thad doesn't need a big city food writer to come anonomysly critique his latest creations.
He prefers to ask people who will tell it to his face.
"Staff, I kind of get them involved wheither it is a new product or new method. I ask, what do you think?" Chef Thad says.
Thad in no way can do it alone, and in an industry plagued by high employee turnover, he's beyond grateful for his righthand men Chef John and Chef Al.
Both have been working at the restaurant for nearly 30 years.
"Thad, he puts his ideas in, I put my ideas in, Chef Al puts his ideas in. We all three put our ideas in and put them in the pot and go from there. " says Chef John Hardin.
With three culinary minds hard at work, its understandable why Michele's is moving Central Wisconsin cuisine into the 21st century.
