The searing sound of hot oil in the fryer and the unmistakable smell of beer batter overwhelms the senses.
That can mean only one thing, its fish fry night in Wisconsin.
At the Pinewood in Mosinee, that means things are bound to be busy.
"Friday and Saturdays are the busiest days of the week, but Friday night fish fry is traditional Wisconsin food." says co-owner Joan Allen.
It's a tradition the Allen family has carried on for nearly 40 years ever since they took over the Pinewood in 1974.
Their fish fry history dates back even longer.
"Everybody does a fish fry and they have there own little way they do it. The batter I use has been around for at least 60 years with the same ingredients and its never changed. " Chef and Co-owner Steve Allen says.
Just because the Pinewood is known for the Friday fish fry's doesn't mean they don't have lots of other claims to fame. They aren't afraid to try new things.
"Steak and lobster are just staples of the menu. We have always maintained those, and then over the course of time as we have been here for the last 40 years we have tried to slowly modernize a little bit of this and we are catering to another generation." Joan Allen says.
Running a restaurant day in and day out is exhausting work,
from keeping the kitchen running smoothly to managing finances and employees, its no easy task.
Steve and Joan say the reactions they get from customers makes this tough job all worth it.
"It means a lot to us. We take a lot of pride in what we do. We certainly do everything we can to make it right for all the people that come in. " Steve Allen says.
Now, the Pinewood hopes to continue that tradition well into the future.
